Meetha paan at home: the recipe, with gulkand

How to make meetha paan at home: which leaf to buy, the gulkand filling, how to fold it, and paan shots for a party. No chuna, no katha, no tobacco.

The short answer

Meetha paan is a betel leaf folded around a sweet filling, eaten after a meal. Gulkand is the heart of it. Spread a teaspoon of gulkand on a fresh paan leaf, add sweet coconut, candied saunf, tutti frutti and crushed cardamom, fold it into a triangle and pin it with a clove. Six paan take about fifteen minutes. This sweet version uses no chuna (lime paste), no katha and no tobacco.

Which paan leaf to buy

Ask your paanwala or vegetable seller for Calcutta (Kalkatti) or Banarasi leaves: they are soft, mild and fold easily, which is why most meetha paan uses them. Magai leaves are prized for their flavour but are small and delicate. Choose leaves that are glossy, unbroken and green, not yellowing. Kept wrapped in a damp cloth in the fridge, they stay fresh for three or four days.

Ingredients (for 6 paan)

• 6 fresh paan (betel) leaves — Calcutta or Banarasi
• 6 teaspoons gulkand
• 3 teaspoons sweetened desiccated coconut
• 3 teaspoons sweet saunf (candied fennel)
• 2 teaspoons tutti frutti
• 6 cardamom pods, seeds crushed
• 6 glacé cherries or cloves, to close
• A few chopped dates or dry fruit (optional)

Method

1. Wash the leaves, pat them dry, and trim off the stalk and the hard tip of the central vein.
2. Lay a leaf shiny side down. Spread 1 teaspoon of gulkand in the centre.
3. Add ½ teaspoon each of coconut and sweet saunf, a few pieces of tutti frutti and a pinch of crushed cardamom.
4. Fold the two sides over the filling, then fold the bottom up and the top down to make a neat triangle or square.
5. Pin it shut with a clove or top it with a cherry on a toothpick. Serve within an hour or two.

Why gulkand matters

Gulkand is what makes meetha paan taste like meetha paan: the rose binds the dry fillings together and keeps the leaf moist. A sun-cured gulkand with whole petals, like our Rose Gulkand, gives a cleaner rose taste than a cooked, jammy one. For a festive paan, use Kesar Elaichi Gulkand, which already carries saffron and cardamom.

Paan shots for a party

Blend 2 paan leaves, 2 teaspoons of gulkand, 2 scoops of vanilla ice cream and 150 ml of cold milk. Pour into small shot glasses. For a quicker version without leaves, stir 30 ml of Paan Sharbat into the milk instead. More ideas in our paan mocktail and paan shake recipes.

Questions

Can I make meetha paan in advance? Make the filling a day ahead, but fold the leaves no more than an hour or two before serving, or they darken.
Can children eat it? This sweet version has no tobacco, chuna or supari, so it is simply a leaf with a sweet filling.
What is the difference between meetha paan and saada paan? Saada paan uses chuna, katha and often supari; meetha paan is sweet and leaves them out. Paan flavours explained covers the rest.
