Gulkand milkshake: a five-minute recipe
Rose gulkand, cold milk and a scoop of ice cream — the classic summer gulkand shake, with the exact amounts.
Gulkand stirred into cold milk is one of the oldest summer drinks in Rajasthan. Blended with ice cream it becomes a milkshake — thick, pink-flecked and tasting of roses rather than of rose flavouring.
Ingredients
• 2 tablespoons rose gulkand
• 250 ml chilled milk
• 1 scoop vanilla ice cream (optional)
• 4–5 ice cubes
• A few chopped pistachios or almonds, to finish
Method
1. Put the gulkand, milk, ice cream and ice in a blender.
2. Blend for 30–40 seconds until smooth and frothy.
3. Pour into a tall glass and scatter the chopped nuts on top.
4. Taste — add another teaspoon of gulkand if you want it sweeter and more floral.
Tips
